Sourdough Pecan Pie Cookies

Ingredients

For the Cookie Dough

  • 2 cups (250 g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup (115 g) unsalted butter, softened
  • ¾ cup (150 g) brown sugar
  • ¼ cup (50 g) granulated sugar
  • 1 large egg
  • ½ cup (120 g) sourdough discard, preferably unfed
  • 2 teaspoons vanilla extract

For the Pecan Filling

  • 1 cup chopped pecans
  • ¼ cup brown sugar
  • 2 tablespoons butter
  • 2 tablespoons maple syrup or honey
  • 1 tablespoon heavy cream or milk
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon

Toasting the Pecans

Begin by toasting the pecans. This small step makes a significant difference in the final flavor.

Place the pecans in a dry skillet over medium-low heat. Cook for approximately 4–6 minutes, stirring frequently.

The pecans should become fragrant and lightly browned. Be careful not to burn them because nuts can go from toasted to burnt very quickly.

Remove them from the heat and allow them to cool.

Once cool, chop them into small pieces. A mixture of finely chopped and slightly larger pieces gives the cookies a pleasant combination of texture.

Preparing the Pecan Filling

Place the butter in a small saucepan over low heat.

Once melted, add the brown sugar, maple syrup or honey, cream, salt, and cinnamon.

Stir until the sugar dissolves and the mixture becomes smooth.

Cook gently for approximately 2–3 minutes. Do not boil it aggressively.

Remove the saucepan from the heat and stir in the vanilla extract.

Add the toasted chopped pecans and mix until they are completely coated.

Transfer the mixture to a small bowl and allow it to cool.

The filling will thicken as it cools. It should be soft and sticky but firm enough to place inside the cookie dough.

Preparing the Cookie Dough

In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.

Set the dry ingredients aside.

In a separate large bowl, beat the softened butter, brown sugar, and granulated sugar until creamy and smooth.

This should take approximately 2–3 minutes with an electric mixer.

Add the egg and beat until fully incorporated.

Add the sourdough discard and vanilla extract.

Mix until the wet ingredients are evenly combined.

The sourdough discard adds moisture and a subtle fermented flavor to the dough.

Combining the Ingredients

Gradually add the dry ingredients to the wet mixture.

Mix on low speed or fold with a spatula until the flour is just incorporated.

Do not overmix. Stop as soon as you no longer see dry streaks of flour.

The finished dough should be soft and slightly sticky but firm enough to shape.

If the dough feels unusually loose, refrigerate it for 20–30 minutes before assembling the cookies.

Chilling the Dough

Cover the bowl and refrigerate the cookie dough for at least 30 minutes.

Chilling helps the butter firm up, making the dough easier to handle and helping prevent the cookies from spreading too much during baking.

For deeper flavor, you can refrigerate the dough for several hours or overnight.

If the dough becomes very firm, allow it to sit at room temperature for a few minutes before shaping.

Forming the Cookies

Preheat your oven to 175°C (350°F).

Line two baking trays with parchment paper.

Scoop approximately 2 tablespoons of cookie dough for each cookie.

Roll the dough gently between your palms to form a ball.

Flatten it slightly and make a small indentation in the center.

Place approximately 1 teaspoon of the cooled pecan filling into the indentation.

Carefully fold the edges of the dough over the filling and seal it completely.

Roll the dough gently again to create a smooth ball.

Make sure the filling is fully enclosed. If there are cracks or exposed areas, the caramel filling may leak during baking.

Place the filled cookie dough balls on the prepared baking trays, leaving approximately 5 cm (2 inches) between them.

Baking the Cookies

Bake the cookies in the preheated oven for approximately 10–14 minutes.

The edges should become lightly golden while the centers remain somewhat soft.

Do not wait for the centers to become completely firm in the oven. They will continue to cook from the residual heat after being removed.

For evenly baked cookies, rotate the trays halfway through baking if your oven has hot spots.

When finished, remove the cookies from the oven and allow them to cool on the baking tray for approximately 5 minutes.

Then carefully transfer them to a wire rack.

Optional Pecan Topping

For extra visual appeal, reserve a few toasted pecans before preparing the filling.

Immediately after the cookies come out of the oven, gently press a few pecan pieces onto the tops.

You can also drizzle the cooled cookies with a simple glaze made from powdered sugar, vanilla, and a small amount of milk.

For an even richer finish, drizzle them with melted caramel.

Tips for Perfect Cookies

Use sourdough discard, rather than a very active starter that you intend to use for bread. Older discard works particularly well because its tangy flavor is more pronounced.

Do not skip chilling the dough. Cold dough helps produce thicker, chewier cookies.

Make sure the pecan filling is cool before using it. Warm filling can soften the cookie dough and make sealing difficult.

Do not overfill the cookies. Too much filling can cause them to burst while baking.

Use parchment paper to make cleanup easier and prevent caramelized filling from sticking to the baking tray.

Bake until the edges are lightly golden. Overbaking will make the cookies dry rather than soft and chewy.

Flavor Variations

For chocolate pecan cookies, add ½ cup chocolate chips to the dough.

For maple pecan cookies, replace the honey with pure maple syrup and add an extra ½ teaspoon of maple extract if desired.

For spiced pecan cookies, increase the cinnamon and add a pinch of nutmeg or ground cloves.

For salted caramel pecan cookies, sprinkle a tiny amount of flaky sea salt over the cookies after baking.

You can also replace some of the pecans with walnuts for a slightly different nutty flavor.

Storage

Allow the cookies to cool completely before storing them.

Place them in an airtight container and keep them at room temperature for approximately 3–4 days.

For longer storage, refrigerate them in a sealed container. Allow refrigerated cookies to come to room temperature before serving, or warm them gently in the oven.

The baked cookies can also be frozen. Place them in a freezer-safe container with parchment paper between the layers and freeze for up to several weeks.

Serving Suggestions

Sourdough Pecan Pie Cookies are delicious with coffee, tea, hot chocolate, or a glass of cold milk.

For a special dessert, warm a cookie slightly and serve it with a scoop of vanilla ice cream.

They are also excellent for holiday cookie trays, bake sales, parties, and edible gifts.

Final Result

The perfect Sourdough Pecan Pie Cookie should have golden, slightly crisp edges, a soft and chewy center, toasted pecans throughout, and a rich caramel-like pecan filling.

The subtle tang from sourdough discard balances the sweetness beautifully, while cinnamon, vanilla, brown sugar, and toasted pecans create the familiar flavors of classic pecan pie.

These cookies are a delicious and practical way to use sourdough discard while creating a bakery-style treat that is sure to disappear quickly.
