Ingredients
For the Lemon Loaf
- 1½ cups gluten-free all-purpose flour blend
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 3 large eggs
- ½ cup granulated sugar-free sweetener suitable for baking
- ½ cup plain Greek yogurt or unsweetened dairy-free yogurt
- ¼ cup melted unsalted butter or neutral oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon finely grated lemon zest
- 1 teaspoon vanilla extract
- ¼ teaspoon xanthan gum, only if your gluten-free flour blend does not already contain it
For the Lemon Glaze
- ½ cup powdered sugar-free sweetener
- 1–2 tablespoons fresh lemon juice
- ½ teaspoon finely grated lemon zest, optional
Preparing the Oven and Pan
Preheat your oven to 175°C (350°F).
Grease an approximately 8½ × 4½-inch loaf pan and line it with parchment paper, leaving some parchment hanging over the long sides. This makes it much easier to lift the cake out after baking.
Because gluten-free cakes can be delicate when warm, lining the pan is particularly helpful.
Preparing the Dry Ingredients
In a medium bowl, whisk together the gluten-free flour blend, baking powder, baking soda, and salt.
If your flour blend does not contain xanthan gum, add the recommended amount.
Xanthan gum helps provide structure and prevents the cake from becoming too crumbly. However, do not add extra if your flour blend already contains it.
Set the dry ingredients aside.
Preparing the Wet Ingredients
In a large mixing bowl, whisk the eggs and sugar-free sweetener together for approximately 1–2 minutes.
The mixture should become slightly lighter and well combined.
Add the Greek yogurt, melted butter or oil, lemon juice, lemon zest, and vanilla extract.
Whisk until smooth.
The lemon zest is especially important because much of the lemon’s aromatic flavor comes from the oils in the peel.
When zesting the lemon, grate only the yellow outer layer. Avoid the white pith underneath because it can taste bitter.
Combining the Batter
Gradually add the dry ingredients to the wet ingredients.
Use a spatula or whisk to gently combine everything.
Do not overmix. Gluten-free batter does not require the same gluten-development concerns as wheat batter, but excessive mixing can still affect the final texture.
The batter should be thick, smooth, and easily spoonable.
If it seems unusually thick, add 1–2 tablespoons of milk or unsweetened plant-based milk.
If it seems very thin, allow it to sit for 5 minutes so the gluten-free flour can absorb some of the liquid.
Filling the Loaf Pan
Transfer the batter into the prepared loaf pan.
Use a spatula to spread it evenly from corner to corner.
Gently tap the pan once or twice on the countertop to remove large air pockets.
Smooth the top.
For additional lemon flavor, sprinkle a small amount of finely grated lemon zest over the batter before baking.
Baking
Place the loaf in the center of the preheated oven.
Bake for approximately 40–50 minutes.
The exact baking time depends on the size of your loaf pan and your oven.
Begin checking after 40 minutes.
The loaf should be lightly golden, and the center should feel set when gently pressed.
Insert a wooden skewer into the middle. It should come out clean or with a few moist crumbs attached.
If the top is becoming too dark before the center is fully baked, loosely cover the loaf with aluminum foil and continue baking.
Avoid opening the oven repeatedly during the first 30 minutes.
Cooling
Remove the baked lemon loaf from the oven and place it on a wire rack.
Allow it to cool in the pan for approximately 15–20 minutes.
Use the parchment paper to carefully lift the loaf from the pan.
Place it directly on the rack and allow it to cool completely before glazing.
This step is important. If you pour the glaze over a very hot cake, it can melt and run off instead of forming an attractive topping.
Preparing the Sugar-Free Lemon Glaze
Place the powdered sugar-free sweetener in a small bowl.
Add 1 tablespoon of fresh lemon juice and stir.
Continue adding lemon juice a few drops at a time until you reach a thick but pourable consistency.
For a stronger lemon flavor, add a little finely grated lemon zest.
If the glaze becomes too thin, add more powdered sweetener. If it becomes too thick, add a few drops of lemon juice.
Glazing the Cake
Once the loaf has cooled completely, place it on a serving plate or wire rack.
Drizzle the lemon glaze slowly over the top, allowing some of it to run naturally down the sides.
For a simple decoration, sprinkle a little lemon zest over the glaze.
Allow the glaze to set for approximately 15–20 minutes before slicing.
Tips for the Best Gluten-Free Lemon Loaf
Use a good-quality gluten-free flour blend. Different blends absorb liquid differently, so the consistency of the batter may vary.
Make sure your baking powder, baking soda, and other packaged ingredients are gluten-free if you need the cake to be strictly gluten-free.
Use fresh lemons rather than bottled lemon juice whenever possible. Fresh juice and zest provide a much brighter flavor.
Do not use too much lemon zest. A generous amount can make the cake bitter.
Allow the cake to cool completely before slicing. Gluten-free cakes are often more fragile while warm and become firmer as they cool.
If using a sugar substitute, choose one specifically intended for baking and follow its manufacturer’s conversion guidance. Different sweeteners vary significantly in sweetness and volume.
Optional Additions
For a lemon-blueberry loaf, fold ½ cup blueberries into the batter before baking.
For a lemon-poppy seed loaf, add 1 tablespoon poppy seeds.
For a coconut lemon loaf, add ¼ cup unsweetened shredded coconut.
For a lemon-almond loaf, replace a small portion of the gluten-free flour with finely ground almond flour, provided it fits your dietary requirements.
You can also add a few drops of natural lemon extract for a more intense citrus flavor.
Storage
Store the cooled loaf in an airtight container at room temperature for approximately 2 days.
For longer storage, refrigerate it in a sealed container for up to 5 days.
Because refrigeration can firm up gluten-free cakes, allow individual slices to sit at room temperature for several minutes before serving.
The loaf can also be frozen without the glaze. Wrap it tightly and freeze for up to several weeks. Thaw it completely before adding fresh glaze.
Serving Suggestions
Serve slices with tea, coffee, or your favorite hot beverage.
For a more indulgent dessert, serve the lemon loaf with fresh berries and unsweetened whipped cream or Greek yogurt.
You can also add a few thin lemon slices and fresh mint leaves for an elegant presentation.
Final Result
This gluten-free, sugar-free lemon loaf should be moist, tender, lightly golden, and packed with fresh citrus flavor. The lemon zest gives the cake a fragrant aroma, while the yogurt helps keep the crumb soft.
The simple sugar-free lemon glaze adds an extra burst of brightness without relying on traditional powdered sugar.
With its fresh flavor and tender texture, this lemon loaf is an excellent everyday cake that can be enjoyed for breakfast, afternoon tea, or dessert.
